Halloween Deviled Eggs – Costa Rican Style

Who says Costa Ricans don't celebrate Halloween? Well, I used to say that myself! Growing up in Costa Rica, Halloween wasn't a holiday we traditionally celebrated. But since moving to the United States, I've embraced the spooky season, and it's become one of my favorite traditions to enjoy with my family.

So, I thought, why not bring a little taste of home into the celebration? These colorful Halloween Deviled Eggs have a delicious Tico twist, combining a classic party appetizer with a touch of Costa Rican flavor.

These Halloween Deviled Eggs are creamy on the inside and spooky on the outside! I use food coloring to give both the egg whites and the filling their vibrant colors, but if you prefer natural alternatives, you can experiment with brightly colored ingredients like beets or dragon fruit for the egg whites and spirulina for the filling. Just keep in mind that natural ingredients may produce different shades and slightly alter the flavor.

What You’ll Need to Make Halloween Deviled Eggs

These Halloween Deviled Eggs use simple ingredients, but the food coloring and Salsa Lizano give them their distinctive appearance and flavor.

🥚 Eggs

I use large eggs for this recipe. Choose eggs without cracks and make sure they are completely covered with water while cooking.

🥄 Mayonnaise

I use regular, full-fat mayonnaise because it produces a smoother and creamier filling. Choose a mayonnaise with a mild flavor so it does not overpower the Salsa Lizano.

🌭 Mustard

Classic prepared yellow mustard works best for this recipe. I prefer it over Dijon mustard because its flavor is milder and closer to the deviled eggs commonly served in the United States.

🍶 Salsa Lizano

I used Original Salsa Lizano, the traditional Costa Rican sauce sold in the bottle with the green label. In the United States, you can usually find it at Latin American grocery stores or online. If you cannot find it, you can make the Homemade Lizano Sauce recipe available here on the blog.

🧂 Salt and black pepper

I use regular salt and finely ground black pepper. Add both gradually and taste the filling before adding more, especially because Salsa Lizano already contains salt.

🎨 Food coloring

I use liquid food coloring because it spreads easily over the cracked eggs inside the bags. Choose any combination of Halloween colors you like. Gel food coloring also works, but it may need to be spread more carefully around the shells.

💡 Tips for Perfect Halloween Deviled Eggs

  • Use eggs that have been in the refrigerator for a few days. Fresh eggs can be more difficult to peel without damaging the whites.
  • Transfer the cooked eggs directly to an ice bath. Cooling them quickly stops the cooking process and helps prevent a gray or green ring from forming around the yolks.
  • Add the food coloring gradually. Start with a few drops and move the eggs around inside the bags until the cracked shells are evenly coated. Add more coloring only if needed.
  • Dry the colored egg whites thoroughly with paper towels. Excess water can dilute the filling and cause it to slide out of the eggs.
  • Add the mayonnaise little by little. The filling should be creamy but firm enough to hold its shape after piping.
  • Prepare the eggs a few hours before serving and keep them refrigerated.
  • For the best presentation, add any final decorations shortly before placing them on the table.

How to Make Halloween Deviled Eggs (With a Touch of Costa Rica)

This recipe comes together in 10 steps. We will first cook and color the egg whites, then prepare the Salsa Lizano filling and assemble the eggs.

Step 1: Cook the Eggs

Place the eggs in a pot and cover them completely with water. Bring the water to a full boil and cook the eggs for 14 minutes, until the yolks are completely set.

Step 2: Cool the Eggs

Transfer the cooked eggs to a bowl filled with ice and cold water. Let them rest until they are completely cool.

Step 3: Crack the Shells

Remove the eggs from the ice water. Using the back of a spoon, gently tap the entire surface of each shell to create small cracks without removing it.

Step 4: Add the Food Coloring

Place the cracked eggs in separate plastic bags and add the desired food coloring to each bag. Move the eggs inside the bags until the coloring covers the cracked shells.

Close each bag securely and refrigerate the eggs for at least 30 minutes. For darker and more noticeable lines, let them rest for 1 to 2 hours or overnight.

Step 6: Peel the Eggs

Remove the eggs from the bags and peel off the cracked shells carefully. Rinse away any remaining pieces of shell and gently dry the colored eggs with a paper towel.

Cut each colored egg in half lengthwise. Carefully remove the yolks and place them in a bowl, keeping the egg-white halves intact.

Step 8: Prepare the Filling

Mash the cooked egg yolks with a fork. Add the mayonnaise, yellow mustard, Salsa Lizano, salt, and black pepper, then mix until the filling is smooth and creamy.

Step 9: Color the Filling

Add the desired food coloring to the yolk mixture. Stir until the color is evenly distributed, adding more food coloring gradually until you reach the shade you want.

Transfer the colored yolk mixture to a piping bag fitted with a decorating tip. Pipe the filling into the center of each egg-white half, then arrange the Halloween Deviled Eggs on a serving plate.

How Do I Know When the Eggs Are Fully Cooked?

The most reliable method is to use a timer. Once the water reaches a full boil, cook the eggs for 14-15 minutes. The yolks should be completely firm, without a soft or runny center. Transfer them immediately to the ice water to stop the cooking process and prevent the yolks from developing a gray or green ring.

How long should the eggs rest in the food coloring?

Let the eggs rest inside the closed bags for at least 30 minutes in the refrigerator. For darker and more noticeable crackled lines, leave them for 1 to 2 hours. You can also refrigerate them overnight for the strongest color.

Can I use gel food coloring?

Yes. Place a small amount inside each bag and move the egg carefully until the coloring covers the cracked shell. Gel coloring is more concentrated, so begin with a small amount.

Will the food coloring change the flavor of the eggs?

No. When used in small amounts, food coloring changes the appearance of the eggs without noticeably affecting their flavor.

Can I prepare these Halloween Deviled Eggs in advance?

Absolutely! You can prepare them several hours ahead of time and keep them covered in the refrigerator until you're ready to serve. For a fresher presentation, I recommend storing the egg whites and filling separately. Simply transfer the creamy yolk mixture to a piping bag, refrigerate both, and fill the egg whites just before serving. Remember, deviled eggs should not be left at room temperature for more than 2 hours. So you better eat them all! 😂

What Can I Do if the Filling Is Too Thick or Too Soft?

If the filling is too thick, add mayonnaise a small amount at a time. If it becomes too soft, refrigerate it for a few minutes before transferring it to the piping bag.

For a final touch, add a small piece of crispy bacon on top of each egg just before serving. It adds a salty crunch that contrasts with the creamy filling.

  • Fill a large pot with plenty of water and bring it to a boil. Once the water is boiling, carefully add the eggs and immediately set a timer for exactly 14 minutes, until the yolks are fully set.
  • Transfer the cooked eggs to a bowl filled with ice and cold water. Let them rest until completely cool.
  • Remove the eggs from the ice water. Use the back of a spoon to gently tap the entire surface of each shell, creating small cracks without removing it.
  • Place the cracked eggs in separate resealable plastic bags. Add the desired food coloring and move the eggs inside the bags until the shells are evenly coated.
  • Close the bags securely and refrigerate the eggs for at least 30 minutes. For darker crackled lines, leave them for 1 to 2 hours or overnight.
  • Remove the eggs from the bags and carefully peel off the cracked shells. Rinse away any remaining shell pieces and gently dry the eggs with a paper towel.
  • Cut each colored egg in half lengthwise. Carefully remove the yolks and place them in a bowl, keeping the egg-white halves intact.
  • Mash the yolks with a fork. Add the mayonnaise, yellow mustard, Salsa Lizano, salt, and black pepper, then mix until smooth and creamy.

  • Wear disposable gloves when handling the food coloring because it can stain your hands and work surface.
