Halloween Deviled Eggs – Costa Rican Style

These Halloween Deviled Eggs feature colorful crackled egg whites and a creamy filling seasoned with Salsa Lizano. A fun Costa Rican-inspired appetizer for Halloween parties and family gatherings.

Ingredients
  

  • 6 eggs
  • ¼ teaspoon mustard
  • 1 teaspoon mayonnaise
  • 2 tablespoons Lizano Sauce
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions
 

  • Fill a large pot with plenty of water and bring it to a boil. Once the water is boiling, carefully add the eggs and immediately set a timer for exactly 14 minutes, until the yolks are fully set.
  • Transfer the cooked eggs to a bowl filled with ice and cold water. Let them rest until completely cool.
  • Remove the eggs from the ice water. Use the back of a spoon to gently tap the entire surface of each shell, creating small cracks without removing it.
  • Place the cracked eggs in separate resealable plastic bags. Add the desired food coloring and move the eggs inside the bags until the shells are evenly coated.
  • Close the bags securely and refrigerate the eggs for at least 30 minutes. For darker crackled lines, leave them for 1 to 2 hours or overnight.
  • Remove the eggs from the bags and carefully peel off the cracked shells. Rinse away any remaining shell pieces and gently dry the eggs with a paper towel.
  • Cut each colored egg in half lengthwise. Carefully remove the yolks and place them in a bowl, keeping the egg-white halves intact.
  • Mash the yolks with a fork. Add the mayonnaise, yellow mustard, Salsa Lizano, salt, and black pepper, then mix until smooth and creamy.
  • Add the desired food coloring to the yolk mixture. Stir until evenly colored, adding more gradually if needed.
  • Transfer the filling to a piping bag fitted with a decorating tip. Pipe it into the center of each egg-white half and refrigerate until ready to serve.

Notes

  • Wear disposable gloves when handling the food coloring because it can stain your hands and work surface.
  • Crack the shells gently with a spoon without removing any pieces. The coloring needs the shell to remain in place to create the patterned lines.
  • Keep the eggs refrigerated while they rest inside the bags, especially if coloring them overnight.
  • Dry the peeled eggs thoroughly before cutting and filling them.
  • For extra flavor and crunch, add a small piece of crispy bacon on top just before serving.
  • Keep the finished deviled eggs covered and refrigerated until ready to serve.
