I like cheese sauce on nachos, but the kind that comes in a jar has never won me over. Sometimes it tastes more like the container than the cheese! I started making my own so I could get the cheddar flavor I was looking for and know exactly what went into the pan. If you've had the same problem with store-bought cheese sauce, I've got the perfect recipe for you!

A small cup of cheddar cheese sauce topped with pieces of tomato and cilantro sits on a plate of tortilla chips. A hand holds a freshly dipped tortilla chip above the sauce.

I usually make this sauce when we’re having something casual and everyone can serve themselves. I put it on the table while it’s still warm, with tortilla chips nearby, and let each person add as much as they like.

The best part is that making cheese sauce from scratch is much easier than you might think. You don't need any special equipment or complicated techniques, just a few basic ingredients and a little patience while everything comes together. The most important thing is to keep the heat under control and give the cheese enough time to melt without overheating it.

My daughter-in-law, Emily, likes to add a can of RO-TEL diced tomatoes with green chilies to her cheese sauce, and it tastes delicious! The tomatoes and green chilies add so much flavor and give the sauce a completely different twist. It's a great idea if you want to experiment with the recipe and try something a little different.

What Goes Into My Cheese Sauce

The cheddar gives this sauce its flavor, while the butter, flour, and milk create the smooth base. The seasonings are simple, so you can adjust the heat without covering up the cheese.

Ingredients grouped together: a small pitcher of milk, a small cup of flour, a quarter stick of butter, a plate with a block of cheddar cheese, and small cups of paprika, chipotle powder and salt.

🧈 Butter

I use butter to start the sauce and cook the flour. Unsalted butter lets me decide how much salt to add at the end. If you use salted butter, taste the sauce before seasoning it.

🌾 Flour

I use all-purpose flour to thicken the sauce. When cooked with butter, it forms a roux, which gives the cheese sauce its creamy texture. The longer you cook the roux, the darker it becomes, developing a deeper, nuttier flavor. You can certainly cook it longer if you prefer, but I like to keep mine light in color and mild in flavor so the sharp cheddar cheese can be the star of the show.

🥛 Milk

Milk turns the butter and flour mixture into a smooth, pourable sauce. I recommend warming it before adding it to the pan to help the ingredients combine smoothly and prevent lumps. Whole milk gives the sauce a richer, creamier texture, but you can also use dairy-free alternatives such as oat, rice, or coconut milk. Simply use the same amount as regular milk. Keep in mind that some plant-based milks may slightly change the flavor and consistency of the sauce.

🧀 Cheddar cheese

Sharp cheddar gives the sauce a rich, noticeable cheese flavor. I prefer shredding the cheese at home because many pre-shredded cheeses contain starches or anti-caking agents that prevent the shreds from sticking together. These can affect how the cheese melts and make the sauce thicker than I want, so shredding it myself gives me more control over the final consistency. You can also substitute dairy-free cheddar cheese, although the texture may vary depending on the brand. I've also made this sauce with dairy-free smoked Gouda, and it's absolutely delicious!

🌶️ Paprika

Paprika adds a mild flavor and gives the sauce a warmer color without making it spicy.

🌶️ Cayenne pepper

A little cayenne adds heat, but you can leave it out if you want a mild cheese sauce.

🧂 Salt

The amount you need depends on the cheese and whether you used salted butter. Taste the finished sauce before adding any.

💡 Tips for Keeping Your Cheese Sauce Smooth

  • Stir the butter and flour constantly. Cook the flour without letting the mixture turn brown.
  • I recommend using a wide skillet because it gives you plenty of room to stir as the sauce thickens. This is the skillet I use for this recipe.
  • Add the milk in stages, whisking the first portion until smooth before adding the rest. Move the whisk across the bottom and around the edges of the pan, where thicker bits can collect.
  • Lower the heat before adding the cheese, then stir gently until it melts.
  • Remove the pan from the heat once the sauce is smooth. Boiling it can cause the cheese to separate and turn grainy.
  • If the sauce has lumps before you add the cheese, pass it through a fine-mesh sieve.
  • The sauce will thicken as it sits. Stir in a splash of milk over low heat if you need to thin it before serving.

How to Make Homemade Cheese Sauce

You’ll see the sauce change texture a few times as you make it, especially when you add the milk. Follow the photos below and keep stirring; it will come together before the cheese goes in.

A skillet on a stovetop contains melted butter with some flour in the center and a whisk above it.

Step 1: Melt the butter and add the flour

Place the butter in a large skillet over medium heat. Once it begins to melt, add the flour and stir to combine.

Step 2: Cook the roux

Stir continuously for 3 to 4 minutes to cook away the raw flour taste. Keep the heat at medium so the mixture doesn’t burn.

Step 3: Add half the milk

Slowly pour in half of the warm milk, stirring in circles until the mixture becomes thick and creamy.

More milk is poured from a pitcher into a skillet containing a thick butter and flour mixture, with some of the mixture clumped around the whisk.

Step 4: Add the remaining milk

Pour in the rest of the warm milk. The mixture may look separated for a moment, but keep stirring.

Step 5: Whisk until smooth

Stir continuously for 2 to 3 minutes, until the milk is fully incorporated and the sauce looks creamy again.

Step 6: Check for lumps

If you see a lot of lumps, pass the sauce through a fine-mesh sieve and return it to the skillet. If it’s already smooth, continue to the next step.

Step 5: Add the cheese

Add the shredded sharp cheddar. Stir gently, scraping the bottom of the skillet to keep the sauce from scorching.

Paprika, salt, and cayenne pepper are being added to a nearly combined mixture of cheese, milk, butter, and flour.

Step 6: Add the seasonings

Stir in the paprika and the cayenne pepper. Taste the sauce before adding salt; the cheddar cheese may already be salty enough.

Step 5: Finish melting the cheese

Continue stirring for 3 to 5 minutes, just until the cheese has melted and the sauce is smooth. Remove the skillet from the heat so the cheese doesn’t separate.

Step 6: Cook until desired thickness

If the sauce is too thick, stir in a little more milk until it reaches the consistency you like. Serve it warm.

💡Questions You May Have Before Making This Recipe

Can I use a different cheese?

Yes. Choose a cheese that melts well and has enough flavor to stand out in the sauce. A mild cheese may melt nicely but produce a sauce that tastes bland.

Why did my cheese sauce turn grainy?

The cheese may have gotten too hot or cooked for too long after melting. Keep the heat low once you add it, and remove the sauce from the stove as soon as it’s smooth.

What if my sauce is too thick?

Stir in a splash of milk at a time until it reaches the consistency you want. If you’re reheating it, do this over low heat.

Can I make it ahead of time?

Yes. Let the sauce cool, store it in a covered container in the refrigerator, and reheat it gently while stirring. Add a little milk if it has thickened.

What can I serve with cheese sauce besides tortilla chips?

This cheese sauce is delicious over steamed vegetables, baked potatoes, French fries, or even Costa Rican Style Hot Dogs. I also love adding it to my homemade Crunchwrap Supreme or drizzling it over Salchipapas Keep it thick for dipping, or stir in a little extra milk for a thinner, pourable consistency.

🧀 More Ways to Enjoy This Cheese Sauce

Ever since I started making my own cheese sauce, I haven't felt the need to go back to the store-bought version. I love being able to choose the cheese, adjust the seasonings, and make a fresh batch whenever I want.

Set out my Pico de Gallo alongside it for another dip, or make my Salsa Rosada so everyone has a choice. You can also try this cheese sauce on my Costa Rican Hot Dogs to give them a different twist.

I hope this recipe inspires you to give homemade cheese sauce a try, especially if you've never made it from scratch before. And if you do, come back and let me know what you think! You can also share a photo and tag @thelatinspoon so I can see your creation.
